Pumpkin Whole Wheat cookies

It's that time of year when the weather is cooler for all things pumpkin.  I have to say that  pumpkin cookies are one of my favorite kinds of cookies.   These cookies are very moist and soft and melt-in-your-mouth good.  So good that I thought I'd share the receipt with all my favorite people.  Enjoy!

Pumpkin Cookies (Whole Wheat)

½ cup butter
1 cup sugar (or ¾ cup honey or agave)
1 egg
1 tsp. vanilla
1 can pumpkin (16 oz.)
2 cups whole wheat flour (might need a little more if sweetening with honey)
½ tsp. baking powder
½ tsp. baking soda
½ tsp. salt
1 tsp. cinnamon (or 2 tsp. if you love cinnamon like me)
1 tsp. nutmeg
½ tsp. cloves
1 cup chocolate chips
1 cup walnuts (optional)

Cream together butter and sugar.  Add egg, vanilla and pumpkin.  In a separate bowl, combine remaining ingredients.  Combine both mixtures and stir in chocolate chips and chopped walnuts.  (Remember not to over mix when working with whole wheat).  Place on greased cookie sheets.  Bake at 350 degrees for 12 to 15 minutes.  Makes approximately 36 cookies.
